How to cook

Reverse-sear works well for thick cuts: low oven (250°F) until internal temp reaches 115°F, then finish with high-heat sear in cast iron, about 1 minute per side. Or grill over high heat, turning every 2 minutes. Rest 10 minutes before slicing.
